The story

Thomas im Johanneshof Baden: Regional Austrian Inn Cooking Meets Winery Heritage

The Kitchen and Its Founder

At Thomas im Johanneshof in Baden, Thomas Reinisch applies his family’s winemaking heritage to modern Austrian inn cooking. Every dish reflects a careful balance between rustic tradition and precise technique, a standard recently recognized by Gault&Millau with a 13.5 point rating. The kitchen operates as both a neighborhood wirtshaus and a refined dining room, allowing classic preparations to sit comfortably alongside seasonal innovations.

Seasonal Plates and Signature Preparations

Reinisch structures the menu around a six course Chef’s Choice format that shifts with the local harvest. Guests often encounter baked blunze paired with fresh water char and sharp horseradish, a combination that bridges rural comfort and refined plating. The Grammelknödel with bacon herbs stands out as a centerpiece, featuring crispy roasted suet dumplings that deliver a deeply savory finish without excess fat. These plates anchor the restaurant’s approach to Austrian cuisine, proving that grounded ingredients can carry serious technical ambition.

The Dining Room and Cellar Program

The space sits directly on the grounds of the family vineyard, blending outdoor warmth with intimate indoor seating. Thomas Reinisch runs the venue as a hybrid establishment where travelers can grab a quick glass while locals settle in for longer meals. House wines draw heavily from Burgundian varieties selected to match the kitchen’s seasonal output. This setup preserves the core values of Austrian inn cooking while allowing the cellar team to guide guests through vertical tastings.

The Reinisch brothers not only run one of the finest wineries in the Thermenregion – since young Thomas Reinisch took charge of the kitchen, the restaurant has also become well worth a visit. The offerings range from solid inn-style cooking to an ambitious six-course “Chef’s Choice” menu that, driven by seasonal ingredients, lets you taste the chef’s creativity. A prime example is a successful pairing of baked blood sausage, arctic char, and horseradish. Special recognition goes to the sensational crackling dumplings with bacon herbs: stuffed with generously crispy-roasted and perfectly seasoned pork cracklings, they deliver a simple pleasure that stands out on its own. To complement this culinary experience, the house’s exceptional Burgundy wines serve as perfect companions. Address: Im Weingarten 1, 2523 Tattendorf, Austria.
