The Kitchen and Its Guide

Edler im Landhaus Oswald in Deutschlandsberg anchors its menu in Steiermark gasthaus cuisine, guided by chef Nina Edler. She draws direct inspiration from French techniques while keeping the focus firmly on local ingredients. Her approach bridges traditional home cooking and refined plating without losing the warmth of a family table. The resulting dishes shift with the seasons rather than chasing fleeting trends.

Signature Preparations

Hand chopped beef tartare arrives with harissa butter, lovage mayonnaise, and a quail egg. Crispy asparagus arancini are served alongside kohlrabi cream and caramelized sheep cheese for a sharper contrast. Fried zander fillet relies on simple garlic butter and an asparagus lime risotto to keep the flavors bright. Grilled calamari pairs with chimichurri and roasted padron peppers, showing how this Styrian gasthaus cooking embraces bold international accents.

The Setting and Cellar

Guests dine within the walls of a historic manor where flexible event spaces welcome both quiet lunches and larger gatherings. The architecture keeps original stone and timber visible while providing comfortable seating for extended conversations. Downstairs, the vaulted wine cellar offers dim lighting and cool air for tasting national and international bottles. This Gault&Millau recognized kitchen maintains that same grounded elegance above ground, favoring substance over spectacle.

This popular establishment has long successfully combined traditional inn cooking with fine dining, and it impressed us once again during our visit. Hand-chopped beef tartare, intensively seasoned with paprika, is served with harissa butter, lovage mayonnaise, and a quail egg. To accompany the asparagus arancini, which are beautifully crispy, they serve kohlrabi cream and caramelized sheep's cheese – an extremely successful combination. The pan-fried zander fillet with garlic butter and asparagus-lime risotto, as well as the grilled calamari with chimichurri and pimientos de Padrón, are flawless. The fact that seasonal baked elderflower pastries are served alongside classic flour-based desserts like strudel and kardinalschnitte demonstrates a strong connection to Styrian culinary traditions. Excellent wine recommendations.
