The story

Adler Restaurant Schwarzenberg: Award-Winning Regional Austrian Cuisine

Roots in the Bregenzerwald

Guests arriving at the Adler in Schwarzenberg step into a building that has served travelers since 1756. This historic structure anchors a steady commitment to regional Austrian cooking. The kitchen sources almost every ingredient from surrounding farms and forests. Sustainable practices guide the menu rather than serving as temporary trends.

The Chef and the Kitchen

Chef Denis Danka leads the culinary program with a focus on honest preparation and seasonal availability. He adapts traditional recipes to current tastes without stripping away their original character. His modern take on Alpine culinary traditions respects the boundaries of what the valley can supply. The kitchen closes during the early week to allow staff and producers to rest.

Signature Plates and Seasonal Ingredients

Ravioli filled with fresh cheese and tossed in browned sage butter remain a reliable starter. The main course often features a crisp veal schnitzel accompanied by smooth celery puree and toasted almond crumbs. Steamed broccoli adds a bright contrast to richer meat preparations. These plates demonstrate how skilled Austrian regional cooking handles valley ingredients with minimal interference.

Wood-Panelling and Quiet Comfort

Dining takes place inside warm rooms lined with natural timber and simple furnishings. The layout encourages unhurried conversation between courses. Large windows frame views of the surrounding hills without demanding attention. Guests frequently comment on the balance between polished service and unpretentious surroundings.

The Eagle in Schwarzenberg is a culinary gem in the Bregenzerwald – with a radiance that extends far beyond the state. This is of course due to the cuisine and service. But not only that. The ambiance, the cozy wood-paneled rooms, and the building itself also contribute to this. In short, it is a place of heartfelt hospitality. But now for the enjoyment: The menu at the Adler features classics of traditional inn cooking made from ingredients that – largely – come from the Bregenzerwald. You should definitely try the ricotta-filled ravioli with sage butter. Or, for the main courses, a veal schnitzel with celery purée and almond crumbs. Fresh, crisp broccoli is also served. All in all, there is nothing that falters. Quite the opposite.
