The story
Nevo in Lauterach brings modern Austrian cooking to Vorarlberg under Hauben-Koch Neven Krizman. After relocating from Damüls in 2023, Neven and his partner Natalie established their base at the Johann hotel. The team operates as hands-on makers who bake bread and cakes, process meat and fish, and craft their own sausages and pasta dough. Fermentation and pickling define the flavor profile, adding depth to the seasonal menu.
Guests begin with house-baked bread served alongside tomato butter. The menu highlights include watermelon carpaccio paired with creamy feta and preserved salt lemons. Meat lovers order the fried entrecote cooked to a perfect pink, accompanied by a rich aromatic jus. The kitchen also produces delicate agnolotti and a savory chanterelle ragout served with truffled potato purée. Every element reflects the commitment to producing ingredients in-house.
The dining room balances a modern-reduced aesthetic with warm, cozy tones. The space creates a comfortable setting for lunch or dinner service. Natalie oversees the guest experience while managing the wine program. The couple runs the operation with a focus on genuine Austrian cooking, treating every detail with care. This dedication earned the restaurant a 11.5 score from Gault & Millau, recognizing the consistent quality and friendly service.
