The story

MÖRWALD “Toni M.” in Fels am Wagram | Contemporary Austrian Gourmet Dining

The kitchen philosophy

At MÖRWALD „Toni M.“ in Fels am Wagram, contemporary Austrian cuisine operates on a clear directive that time spent eating is time spent living. Grand Chef Toni Mörwald founded this standard years ago, and Executive Chef de Cuisine Phillip Hagenauer now executes it through two rotating tasting menus. The kitchen prioritizes seasonal produce and precise techniques over heavy sauces or theatrical presentation. The property’s recent Michelin star recognition aligns with their consistent Gault&Millau 17.5 rating, which reviewers note for its beautifully coordinated courses.

Signature preparations

Seasonal tasting progressions highlight the Austrian cooking’s attention to texture and temperature. House-made parmesan noodles arrive coated in nutty brown butter and topped with shaved Périgord truffle, while game-flour dumplings gain sharpness from finely minced champagne herbs. Grilled sturgeon served alongside spring herbs and crispy potato leaves demonstrates how the team handles river fish with modern restraint. Pink lamb fillet cooked medium rare pairs with tender asparagus Royal and earthy morels, leading to sweet conclusions like a vanilla soufflé accompanied by violet ice.

Dining space and service flow

The main hall features clean lines and muted tones that keep focus squarely on the plates. Visitors frequently request tables near the glass doors during summer, since the maintained garden directly overlooks the rolling Wagram vineyards. Restaurant Manager Felix Rieger orchestrates floor coordination while Head Sommelier Elias Neuhäusel aligns local Grüner Veltliner selections with each course. This structured yet unhurried pacing allows guests to absorb the regional cuisine without feeling rushed between servings.

Even the name "Mörwald" is reason enough to travel to the Wagram region and treat yourself elegantly in the gourmet village of Feuersbrunn. You take a seat in the luxurious "Toni M." restaurant or in the well-kept, charming garden and choose your courses and dishes from two menus. The extensive wine list contains everything the heart desires. The welcome dishes from the kitchen deliver a delightfully positive first impression. Finely crafted, the parmesan noodles with brown butter and Périgord truffle are exquisite. The Grammelknödel with champagne herbs once again impress with their sophistication. Wonderfully tender and convincing, the BBQ sturgeon with spring herbs and "100 Blatt Erdäpfel" becomes a true delicacy. Unfortunately, the pink lamb fillet arrives almost raw, though it is delicious alongside royal asparagus and asparagus morels. As a fitting conclusion, an exquisite vanilla soufflé with violet ice cream is served. Unsurpassed is the cheese Magnum with passion fruit gel, pepper foam, and crispbread, which appeals to individual tastes. The restaurant "Zur Traube" is essentially the house's second restaurant, though this distinction is hardly apparent on the plate or in the glass. While the marinated Atlantic salmon with its accompaniments of red cabbage, blackberry, and yogurt may be somewhat acquired, the charmingly titled "Gangerl" – veal Rieslingbeeserl – delivers pure classicism. The pan-fried lamb is finished with blue cheese accents, which elegantly counterbalance the sweetness of the pumpkin and marrons. Unfortunately becoming increasingly rare are the traditionally prepared Crêpes Suzette, accompanied by a fine Trockenbeerenauslese served by the glass. The young service staff maintains a charmingly professional demeanor.
