After leading kitchens across Europe, including a tenure at Hotel Thurnher’s Alpenhof and as a cook for the Toyota Formula 1 team, he brought that technical precision back to his family property. These high-pressure environments taught him discipline, which now guides the daily operations and ensures every plate reflects exacting standards. He manages both the front of house and the pass, maintaining consistency across all service periods while adapting the family recipe books for modern palates.

The Austrian kitchen relies heavily on local producers to build its rotating menus. Spring brings bear garlic and asparagus mousse alongside precisely cooked lamb loin and ragout. Guests frequently order venison fillet paired with sea buckthorn, or start with Arctic char tartare finished with fresh parsley root. Rustic, cozy, and usually featuring a full regulars' table, the country house presents itself this way not only on weekends. Alongside the traditional tavern menu ranging from Flecksuppe to Kaiserschmarrn, a Styrian culinary menu in four or five courses is offered. Products from regional suppliers form the basis for the seasonally oriented cuisine. In spring, guests can enjoy among other things bear leek and asparagus mousse, as well as excellent lamb (loin, sweetbread, ragout). A three-part soup variation is served as a set course throughout the year. When the owner is booked for catering elsewhere, the establishment is closed on a day-by-day basis.
