The story

Der Literwirt Gleinstätten: Modern Steirische Cuisine & Gault&Millau Recognition

The chef and the kitchen

At Der Literwirt in Gleinstätten, Chef Walter Schmid junior guides a third-generation family operation where Steirische cuisine meets refined technique. The restaurant balances rustic hospitality with a distinct culinary evolution, recognized recently by a Gault&Millau 13 score for its shift toward creative, locally sourced excellence. Schmid applies a dual approach described as "with an apron at noon, with a toque at night." Lunch service leans toward grounded preparations while evening menus embrace fine dining principles. His brigade relies on seasonal availability, allowing dishes to emerge from the freshest regional produce rather than a fixed script. This flexibility results in unexpected pairings, such as Asian-inspired nuances woven into classic frameworks.

Seasonal highlights

The menu features compositions like Arancini-Maishendl served in a sweet-and-fruity carrot jus, showcasing how familiar ingredients can be reimagined. Another signature involves Jungschweinravioli paired with Parmesan, reflecting the broader direction of Steirische cooking here, which honors terroir without ignoring innovation. For those preferring substantial cuts, the filets from Duroc pig and pan-fried carp represent robust choices rooted in local tradition. A five-course surprise menu expands this exploration, guiding guests through eight distinct bites including handmade pralines.

Space and cellar

Visitors enter a setting that accommodates both casual jeans wearers and diners seeking a sharper dress code. The recent terrace renovation complements the interior's warm, lounge-like vibe, especially when accompanied by craft cocktails. A standout feature is the walk-in wine climate room, inviting guests to explore selections directly. This accessible approach underscores the family's commitment to making high-quality gastronomy feel welcoming rather than stiff.

In recent years, the guesthouse has undergone a contemporary transformation. The terrace has now also been tastefully refurbished, and Walter Schmid junior has given the creative culinary direction a strong new push. True to the motto: “Lunch with an apron, dinner with a chef’s hat,” the focus now lies not only on excellent down-to-earth cuisine (fillet of Duroc pork, pan-fried carp) but also on fine dining based on the surprise principle. Remarkable creations from local produce emerge, such as arancini with corn-fed chicken in a fruity-sweet carrot jus or young pork ravioli with Parmesan. Cocktails create a relaxed lounge atmosphere. A look at the “walk-in wine cabinet” is highly recommended. Above all, the Literwirt is one of the most welcoming establishments in Styria.
