Where does Lukas Nagl sail in his dream house on Lake Traunsee? The amuse-bouches set the course: among them, small brioche toasts with pike roe or “nigiri” made from potato strips and lake trout reveal what culinary treasure trove the Salzkammergut region can actually be. The bread course solidifies this impression; alongside grilled bread comes carp vinegar sausage, miso lard, and elderflower umbels pickled in Traunsee garum: heaven and earth! In the main menu, Nagl stays entirely true to himself, that is, to the water: lake trout tartare with pickled radishes and leaf horseradish, pan-fried Traunsee pike with green asparagus and a citron mustard seed marinade, or – the main course and highlight – sturgeon from the Seeache river, served once minced as a kind of exotic Traunkirchen-style köfte, and once pan-fried with morels and carrot sauce. It has class, it has finesse, it has tension, it has it all. But the pastry course doesn’t lag behind either – and two or three odes have already been sung to the wine selection here. Set sail!
