The story

Döllerers Wirtshaus Golling: Refined Alpine Cuisine in a Family Setting

The kitchen and the family legacy

Döllerers Wirtshaus in Golling an der Salzach anchors its reputation in a tradition built around refined alpine cuisine. Andreas Döllerer directs both the kitchen and the guest experience, balancing deep respect for regional produce with quiet curiosity for modern preparation. The foundation remains firmly rooted in regional cuisine, where ingredients travel short distances from mountain pastures to the pass counter. This approach keeps the cooking grounded while allowing precise technical execution.

Signature plates and seasonal shifts

The menu moves beyond standard inn fare through careful layering of textures and temperatures. Radish tarts arrive on Breton pastry alongside Großglockner goat cheese and sturgeon caviar from Grödig. A slow roasted red beet rests in glacial sand before being rehydrated, then paired with horseradish velvet and elderflower vinaigrette. Gault&Millau specifically notes how classical preparations like Hechtnockerln in Chablissauce surpass typical regional standards.

The courtyard, the garden, and the wine program

Guests settle into a walled inner courtyard designed for relaxed dining during warmer months. Behind the main building, an edible garden features forgotten Alpine fruit trees, herb terraces, and fifteen beehives that yield the house’s first organic honey. Natural stone retaining walls and Corten steel frames separate the growing beds from the seating areas. Master sommelier Alexander Koblinger curates an extensive wine list that complements the alpine cooking style, ensuring every course finds a clear companion in the glass.

Despite the highly professional management by the Döllerer family, the warmth and charm of the inn certainly shine through just as brightly: after a friendly welcome from the motivated young service team, guests can take a seat in the beautiful courtyard on warm days. Alongside classic inn dishes such as Wiener Schnitzel, goulash, and grilled sausages, the menu also features rustic French dishes. You won't find better classic trout dumplings in Chablis sauce even in Alsace. The seasonally limited baked elderflower blossoms with sour cream ice cream and strawberries are simply divine, and the exceptionally extensive wine list offers the perfect pairing. Effortless enjoyment doesn't get much better than this! Address: Markt 56, 5440 Golling, Austria. Contact: 06244 42 20 | office@doellerer.at | https://www.doellerer.at/.
