Thomas Galler can cook. He has already proven this at Aiola Upstairs and the now-closed Carl in Graz. Currently, guests at the modern Arravané near the Stadthalle are benefiting from his talent. The menu features subtly creative, harmonious dishes: delicately marinated trout with pumpkin, tender veal loin with parsnips and a crispy semolina praline. Equally successful are the goat cheese crème brûlée, whose consistency isn't immediately apparent, and the char fillet in a delicious horseradish beurre blanc—executed so well that it rivals even the finest versions from France, the motherland of sauces.
