The story
Bar Amouro brings Levantine cuisine to the heart of Graz, housed within the Aiola Living Store. Owners Judith and Gerald Schwarz launched the project alongside concept developer Alex Knoll to capture a feeling of endless summer. They bottled that seasonal warmth into their signature Vermutico, a fruit-infused aperitif that sets the tone for every visit. Kitchen architect Kevin Lang shapes the culinary direction, blending Mediterranean roots with precise execution.
The kitchen operates across distinct dining rhythms, starting with morning plates featuring sunny side eggs, pine nuts, and fresh focaccia. Lunchtime shifts toward vibrant plating designed to pause the daily rush. Evening service introduces a collaborative Miss Cho menu that merges traditional meze with refined Asian preparations. Guests regularly share tempura eggplant chips, citrus lemon hummus, and slow grilled shashlik, while sweet finishes highlight baklava, lemon cream, and halwa pudding. This approach keeps Levantine flavors centered around communal tables rather than rigid tasting formats.
Deep blue upholstery rests against saturated yellow walls and brushed gold accents, creating a space that feels both plush and unhurried. Padded surfaces and concealed alcoves absorb street noise while crystal chandeliers cast steady light over high-backed seating. A Gault&Millau score of eleven and a half reflects this careful balance between relaxed urban living and polished service. Visitors linger over curated wine selections, treating the room as a refuge where time moves at a human pace.
