Restaurant Florian has anchored Graz’s dining scene since 1934, building a steady reputation around thoughtful Austrian cuisine. Third-generation managers Sissy and Peter Florian pivoted toward local sourcing long before the movement gained momentum. Their children now oversee daily operations alongside head chef Kurt Mörth, who joined the kitchen in 1981. That continuous leadership explains why the Gault&Millau judges awarded 12.5 points and a hat in their 2026 edition.

Seasonal plates and regional ingredients

The menu shifts with the harvest, letting local produce dictate the course order. A bright char ceviche arrives with a crisp Copski salad, offering a refreshing option during summer heat. Cooler months bring back the trout prepared à la Philippine Welser, which pairs delicate freshwater flesh with sardines and wilted chard. Richer evenings call for dumplings made from Kalkalpen sturgeon, finished with a savory reduction that lingers pleasantly.

Diners escape the street level into a sheltered courtyard where climbing roses frame each table. The garden runs nearly every day of the week, attracting guests who value steady conversation over loud crowds. Sommelier Oliver Petritz matches meals with bottles from nearby estates, while the team openly notes plans to broaden the vintage roster. Even in the secondary, or rather main, restaurant of the Parkhotel, there are echoes of the past, such as with the brook trout à la Philippine Welser (served with anchovies and chard), where the delicious sauce – just like the lobster Buzara with shellfish ravioli and the one accompanying the Alpine sturgeon dumplings – is truly outstanding. Char ceviche with an enhanced Copski salad: a tangy and refreshing dish, ideal for hot summer days. For seating, the partially covered, lovely restaurant terrace is recommended.
