The story

Gerüchteküche Graz: Plant-Based Cuisine by Chef Michael Wankerl

A vegetable-first philosophy

Gerüchteküche in Graz leads a strict plant-based cuisine that leaves no room for animal products or imported ingredients. Chef Michael Wankerl sources his produce directly from the Kaiser-Josef-Platz farmers market, ensuring every harvest aligns with local seasons. This commitment to low-waste preparation recently earned him a fifteen-point rating from Gault&Millau, which praised his ability to transform common roots and leaves into refined plates. The kitchen treats vegetables as the undeniable centerpiece, building entire menus around what the regional soil yields.

Precision on the plate

Wankerl applies fermentation and preservation techniques to extend the autumn harvest through winter months. His plant-based cooking style layers kohlrabi in a deep shiitake reduction while fermented carrot kimchi cuts through delicate chicory. He occasionally introduces seitan, dashi stock, and amazake to bridge European and East Asian flavor profiles. Green algae caviar provides texture alongside roasted celery, and a vegan crème brûlée finishes the meal with pear ice rather than dairy custard.

Communal dining rhythm

Guests sit down for a fixed surprise menu that begins promptly at eighteen thirty. The restaurant serves six or more courses simultaneously to everyone present, creating a synchronized tasting experience that rewards patience and curiosity. The plant-based kitchen pairs these vegetable-driven courses with regional organic wines, house-made kombucha, or sparkling teas. The space remains uncluttered and quiet, allowing the textures of seasonal produce to take center stage without distraction.

Just a few minutes' walk from his Gerüchteküche on Gartengasse in Graz, Michael Wankerl can draw inspiration from seasonal fruits and vegetables at the local farmers' market on Kaiser-Josef-Platz. It is remarkable what the native of Nuremberg can create from these plants – from root to blossom – and how skillfully he combines the flavors of carrot, kohlrabi, celery, chicory, and green algae caviar. Occasionally, he draws inspiration from Asian cuisines, blending in seitan, dashi, and amazake. The shiitake sauce encircling the kohlrabi, the carrot kimchi, the pear ice cream on a vegan take on crème brûlée: delicious! Wankerl complements this with an exquisite collection of regional organic wines.
