The story

Kornati Graz: Modern Croatian Cuisine & Adriatic Seafood in Styria

The Kitchen and Its Roots

Kornati in Graz has anchored Croatian inspired cuisine since 2011 under the direction of Chef Borivoj Radmanovic. The kitchen takes fresh catch directly from the Adriatic and pairs it with seasonal vegetables sourced from local markets. This focused approach to Croatian cooking bridges the sea and central European soil. The menu prioritizes product integrity over complex technique.

Signature Plates and Seasonal Shifts

Guests frequently order the saucy blue mussels cooked with white wine, lemon, fennel, and chili butter alongside a crisp white fish ceviche. A rich seafood stew served over truffle polenta demonstrates how the team handles heavier preparations. The bluefin tuna steak arrives perfectly seared with grilled vegetables and a reduction jus. These consistent executions earned the venue a twelve point rating from Gault&Millau.

The Room and Regional Wines

Dining happens inside a compact blue building along Franckstraße that evokes quiet summer evenings by the coast. The space feels intentionally unpretentious, leaving room for conversation rather than theatrical service. Pairs easily with a curated selection of Istrian and Dalmatian bottles pulled from the cellar. You will find bright Malvazija alongside structured Plavac Mali and biodynamic orange wines that cut through the richness of the seafood.

In a quiet corner of Graz's university district, this small restaurant offers excellent cuisine with a focus on seafood in the style of modern Croatian cooking. Juicy blue mussels in a spicy white wine sauce with lemon, fennel, and chili butter, fresh white fish ceviche, and a seafood stew with truffle polenta showcase its variety. A perfectly cooked bluefin tuna steak with vegetables and truffle jus is equally impressive. To finish, a light white chocolate mousse with mango and coconut, along with homemade sorbets, are highly tempting. Croatian wine recommendations complete the offering.
