The story

Bergergut Fine Dining in Haslach an der Mühl | Award-Winning Austrian Kitchen

The chef and regional produce

BERGERGUT in Haslach an der Mühl anchors its contemporary Austrian cooking around Thomas Hofer, who leads the three-toque kitchen alongside host Eva-Maria Pürmayer. His approach treats local suppliers as primary collaborators, building menus that shift daily based on what arrives fresh from neighboring farms. The recognition from Gault&Millau reflects this methodical respect for terroir rather than forced innovation. Guests following his Trust the Chef progression experience six precise courses that highlight seasonal vegetables, cured meats, and house-made pasta like the tagliarini paired with black truffle.

A history of craft and quiet hospitality

The property sits inside granite walls originally built during the seventeenth century. Earlier generations ran a weaving mill and dairy here before pivoting toward intimate travel in the nineteen nineties. That transition settled firmly into an adults-only retreat where roughly forty-five staff members manage everything from the forest spa to the historic wine cellar. The current layout preserves those original storage rooms, now repurposed for evening tastings of European wines.

Wood-fired bread and neighborhood brewing

Daily routines begin with sourdough baked in the on-site oven, which also yields occasional thin-crust pizzas when the schedule allows. The beverage program leans heavily into the surrounding hop country, maintaining a curated selection of nearly thirty regional ales alongside traditional lagers. Cooking workshops let visitors shape their own dough while Hofer demonstrates knife techniques for the evening service. These practical sessions bridge the gap between casual pub fare and refined Mühlviertel cuisine.

The Bergergut in the Mühlviertel region, near the Czech border, is a gourmet hotel. On the one hand, this refers to a brand network of culinary-oriented hotels; on the other, it also conveys a clear message. Thomas Hofer, who runs the hotel together with his wife Eva-Maria Pürmayer, is the head chef and developed his passion for cooking quite early on. At the Bergergut, he offers a comprehensive culinary well-being program that begins with bread baking and ends with a Mühlviertel-style "Omakase" menu. In his three- to six-course fine dining menu "Trust the Chef," Hofer provides a stunning stage for local producers. Then there is also the à la carte section, which holds its own. We were particularly taken with the homemade tagliarini with black truffle. And by the way: the bread-baking house doesn't just bake bread. Occasionally, they also serve sensational pizza.
