The story

vaMoos in Wagrain: Awarded Modern Regional Cuisine with Mountain Views

The Kitchen and Sourcing

At vaMoos in Wagrain, head chef Lukas Wurzenrainer and sous chef Rene Hofer build their modern regional cuisine around a network of over twenty local farmers and Italian producers. This supply chain anchors every plate in strict seasonality rather than permanent menus. A thirteen and a half point Gault&Millau rating highlights how consistently they execute those ingredient focused concepts. Weekly cards introduce special cuts or market driven dishes that shift with harvest cycles.

Signature Plates and Pairings

Appetizers frequently highlight crisp textures, such as a cold salad built around wild caught Alpine prawns. Main courses rely on slow preparation techniques to soften tougher meats, evidenced by a tender chamois ragout resting beside roasted Jerusalem artichokes and chewy bear garlic gnocchi. Desserts lean into bright contrasts, pairing a light limoncello foam with dense buttermilk ice. Visitors preferring quicker options order fresh dough pizzas from the dedicated Luigi’s counter.

Interior Layout and Terrace

Handcrafted oak tables anchor multiple lounge zones that distribute natural light across the ground floor. Floor to ceiling windows frame uninterrupted mountain vistas above the Salzburger valleys. Guests typically transition from afternoon aperitifs to evening wine selections while seated at these sturdy surfaces. The spatial arrangement keeps conversation volumes low enough for quiet business meetings or leisurely weekend brunches.

Three menus are available this evening: one for drinks, one for standard dishes, and one for edible seasonal alternatives. We're having a bit of trouble keeping track, as the selection is extensive – sometimes regional, sometimes trendy. Instead of pizza, a house specialty, and steak, we get a beautifully presented salad with Alpine prawns. The ragout from the Kleinarl chamois is nicely tender and surrounded by Jerusalem artichokes and slightly too-firm wild garlic gnocchi. Along with the limoncello foam with buttermilk ice cream – excellently done! – we also receive a sip of limoncello, personally prepared by the friendly Italian-descendant service manager. We then take away a pizza – speaking of take-away – from the separate counter. It was really good!
