A look at the menu reveals what is important to the Schindler team: Suppliers and partners are meticulously listed; provenance seems to play a significant role. The meat for the Beef Tartare comes from Angus cattle belonging to ski star Fritz Strobl, while Tyrolean Wagyu and Haller Alpine prawns provide the content for the Bento box.
