The story
Chef Elisabeth Geisler has defined the culinary direction of Sitzwohl since 2006, working alongside co-founder Irmgard Sitzwohl until she transitioned to full-time farming in 2020. The partnership produced two Haubenköchinnen who developed a distinct style rooted in generosity and precision. Today, Irmgard continues to supply ingredients like blood peaches and pumpkins from the family farm in Styria. This direct connection to the land informs a philosophy centered on the symbiosis of simplicity and high-quality produce. Their Austrian-Mediterranean cuisine draws equally on local traditions and the bright flavors of Italy and Spain, rejecting unnecessary complexity in favor of honest regional Austrian cooking.
The menu emphasizes robust vegetables and carefully sourced proteins. Gault&Millau highlights the meagre fillet with morel jus and pea risone as a particularly convincing composition. Regular features include saltimbocca from calf loin paired with barley vegetable risotto, alongside gnocchi finished with a dense bolete mushroom sauce. The Italian kitchen appears prominently in pasta creations such as lasagne layered with spicy calf sugo and parmesan foam. Every dish adheres to the promise of solid, market-fresh cooking where the ingredient remains the undisputed focus rather than technical display.
Housed within a listed building in the Stadtforum complex, the space honors its origins as the former Gilmschule while presenting a refined modern interior. The design favors minimalism, allowing clean architecture to frame the dining experience. Luminous stone elements embedded between the tables serve as striking visual focal points that guests immediately notice. The atmosphere balances chic restraint with a grounded intimacy, creating a comfortable environment for both business lunches and celebratory dinners. This setting reinforces the relaxed yet professional service ethos that makes the restaurant a permanent fixture in Innsbruck's gastronomic landscape.
