His method pairs classical technique with mountain seasons, prioritizing precision over spectacle. The venue secured a 16.5 point Gault & Millau rating for 2026, a mark that mirrors a menu focused on clear, seasonal ingredients.

Seasonal Plates and Regional Focus

The kitchen treats Alpine cooking as a framework for local sourcing and straightforward execution. A focaccia layered with cured speck and black truffle opens the service, followed by veal tartare and a whole sea bass fried directly on the skin. A braised Tyrolean beef plate grounds the progression, while a layered potato mille-feuille offers texture before the final course.

Materials and Cellar Ambitions

Timber and stone define the dining room, positioning the tables steps from the Fimba gondola station. Patron Christian Eiterer is funding a cellar overhaul during the 2025 hotel renovation to house one of Austria’s top Bordeaux collections. The evening concludes with a mobile cheese cart, where the chef and a dedicated sommelier walk guests through aged wheels alongside a sharp pistachio and raspberry dessert.

Good news for Ischgl: The Tyrolean party and gourmet mecca will soon be able to look forward to another culinary highlight. During the major renovation of the Fliana Hotel in Ischgl, one of Austria's finest Bordeaux wine cellars is set to be created. Fliana owner and Bordeaux wine enthusiast Christian Eiterer, who became the first person from the Paznaun valley to summit Mount Everest in 2005, aims to reach new heights even when it comes to wine enjoyment. Head chef Andreas Spitzer has long been regarded as one of the best chefs in Ischgl. Following focaccia with bacon and truffle and veal tartare, pan-seared sea bass with crispy skin served with "Alpine caviar" and a magnificent potato mille-feuille will be served. The Tyrolean beef is prepared magnificently. And after a pistachio-raspberry dessert, the cheese cart personally attended by the head chef and cheese sommelier must not be missed.
