The story

Lois Stern Kitzbühel: Asian-Mediterranean Fusion Since 1994

The open kitchen legacy

At Lois Stern in Kitzbühel, chef Lois Stern serves Asian-Mediterranean fusion that balances lightness with sustained quality. The kitchen operates as an open stage where guests watch the preparation unfold. Since opening in 1994, this visible cooking area has remained a central feature of the experience. Guests observe the careful assembly of each plate while the chef manages the pass. The setup invites curiosity without disrupting the meal's rhythm. The kitchen's dedication to flavor balance earns recognition, highlighted by a Gault&Millau score of 13.5.

Signature plates and pairings

Rare black sea bass from Patagonia arrives with a miso-sake sauce that highlights the fish. The rib eye of Australian Black Angus rests in red miso mirin dashi alongside wild broccoli. Starters include hamachi ceviche with yuzu koshu salsa and tempura made from wild-caught black tiger prawns. Desserts feature a passion fruit tart paired with dark sesame ice cream or a valrhona fondant served with matcha sorbet. Each composition relies on precise technique rather than heavy sauces.

A welcoming dining room

The atmosphere remains friendly and unpretentious, reflecting the team's long-standing presence in town. Service staff recommend sakes that complement the soy and ginger notes found across the menu. House-made sourdough bread arrives with extra virgin olive oil imported directly from Tuscany. This Asian-Mediterranean style continues to draw diners seeking refined yet accessible meals. Every dish emphasizes fresh produce and sustainable seafood certified by MSC standards.

If you want to eat Asian food in Kitzbühel, you simply cannot miss Restaurant Lois Stern. Part of the concept is the open kitchen, which invites guests to watch the chefs at work. We begin with a house recommendation: a miso soup with tofu, where the miso flavor is pleasantly subtle. This is followed by a rare delicacy: black sea bass from Patagonia, served with a miso-sake sauce. The perfect finale is a passion fruit tart that would do any patisserie proud, served with dark sesame ice cream. While the wine list features many selections that pair well with Asian cuisine, the recommended sake truly delighted us. The exceptionally friendly service and pleasant atmosphere make this visit a highly satisfying culinary experience.
