Since dietary intolerances must already be declared when making a reservation, the only difficult decision once seated is choosing between three, four, or five courses. A chicken thigh is deconstructed into a compact flavor bomb alongside pickled radish, asparagus tips, and wasabi foam. In the velvety wild garlic foam soup, grape gelée cubes provide surprising tiny sweet counterpoints to the garlic heat.
