Restaurant Kolm once again draws visitors to the Waldviertel. Right from the start, Michael Kolm sends several greetings from the kitchen that immediately make it clear the trip was worth it. One of the first dishes served is an incredibly tender wild boar with avocado, zucchini, and a mild chimichurri – a successful beginning. The following smoked foam soup evokes associations with the sparse cuisine of farmers, but in this case, that is completely unfounded. The broth is incredibly refined in flavor, and the Einkorn semolina dumplings are crispy on the outside with a fluffy interior. For the main course, a duo of lamb is served with a very fruity paprika cream and a cabbage pizza – unusual, but exceptionally good. For dessert, quince with tonka bean ice cream.
