His preparations begin well before summer arrives, relying heavily on early spring ingredients like wild garlic. The menu adapts rapidly to what the region yields, transforming foraged greens and fresh dairy into the core of each Austrian cooking service.

Standalone Dishes and Precise Techniques

Visitors frequently order the apricot dumpling wrapped in fine kataifi strands, which rests in a smooth curd cream beside a concentrated apricot roast. Heartier selections feature a slice of braised beef cheek accompanied by uniformly crisp potato strips cut into thin rods. House-made ravioli appear when ripe tomatoes allow for simple, reduced fillings that highlight the fruit itself.

Arrive, settle into one of the two enchanting guest gardens, and enjoy an early start to the season with a crispy apricot dumpling made from kataifi pastry, filled with quark cream and roasted apricots – vintage 2024 – That’s the Wachau way. On an April visit, everything beforehand is flavored with wild garlic – be it in soup with quark and ham dumplings or as a filling for homemade ravioli with melted tomatoes. New highlight: the beef cheek steak served with perfectly crispy stick-shaped potato rösti. A reliable classic: Riesling Ried Klaus 2015. Also noteworthy: flawless yet warm service provided by Johannes Altmann and his team.
