Roots in the kitchen

Schwarz brings classic Austrian cuisine to the quiet village of Nöhagen near Krems an der Donau. The family has managed this Gasthaus since 1917. Erwin Schwarz still prepares dishes personally alongside his son Constantin, building every Austrian dish from scratch with homegrown potatoes.

Signature plates

The menu highlights rustic staples refined through careful technique. Fluffy Grammelknödel and finely seasoned blood sausage appear alongside baked calf’s head. A fourteen-point rating from Gault&Millau confirms the consistency here, especially when the Rostbraten meets beef cheek ragout finished in Semmelkren. The stuffed veal breast stays true to its original form.

Wooden Stammtisch tables anchor the main hall. Space opens into a festive banquet room and a glass-walled winter garden that accommodates fifty guests. Reservations are essential, and anyone who has once been pampered here will understand why. On the menu are the fluffy Grammelknödel, the finely seasoned blood sausage, the baked calf's head, or a piquantly prepared calf's tripe from the inner lining. The roast beef is cooked to perfection, the leg meat ragout with Semmelkren is pure soul food, and the stuffed veal breast is truly a stuffed veal breast—and not a veal roll. For desserts, the cream slices and walnut Moor cakes are already legendary, while the quark dumplings with poppy seed and apricot crumble are well on their way to achieving the same status. The wine list must definitely be mentioned, impressing with both its breadth and depth of vintages—and sweet wines available by the glass are hardly commonplace.
