Whether the simple Eurodance-country novelty "Cotton Eye Joe" was, as claimed on the menu, a "pop classic of the 90s," remains open to debate. The dish of the same name – fried blood sausage slices with "Chilimanscharo" (a similarly cleverly named homemade chili paste made with peppers and tomatoes) and fresh sheep cheese – is indeed a culinary hit. Served under the name "No Lard Crumb Dumpling" is a delicious potato dumpling filled with cracklings and chili, accompanied by sauerkraut and Red Amposta onions, while the perfectly grilled trout with eggplant cream and verbena cucumber surprisingly goes simply by the name "Mountain Trout." The fine hazelnut nougat slice with cherry ragout is listed under "Others call it Mannerschnitte." The question of whether great regional and creative cuisine can handle humor is answered by Josef Floh once again this year with "Relaxed!"
