The story

Feinschliff in Leoben: Modern Austrian Cuisine by Chef Raphael Schlager

The Kitchen and Its Philosophy

At Feinschliff in Leoben, chef Raphael Schlager applies a disciplined approach to Austrian cooking. His plates balance familiar regional flavors with contemporary technique, grounding the Austrian cuisine in practical craft. This consistent attention to detail earned the kitchen a twelve and a half rating from Gault&Millau. The dining room feels quietly intimate despite its hotel setting, allowing guests to watch the open kitchen work. Every course follows a clear structure built around local ingredients and precise execution.

Seasonal Menus and Craft

Guests choose between two distinct tasting formats, each designed to highlight the current harvest. The five course Essence menu strips the experience down to clean lines and honest craftsmanship. The nine course Journey option expands into broader flavor contrasts and textural experiments. A curated wine pairing sits ready to complement each selection without overshadowing the primary ingredients.

The Dining Room and Setting

The restaurant occupies a quiet corner of Au Park, just steps from the Asia Hotel & Spa Leoben. Natural light fills the space during early evening service, while the polished surfaces reflect the steady rhythm of the pass. An open layout lets diners observe the brigade assemble each plate. Regular menu updates ensure the Austrian kitchen remains tightly focused on seasonal shifts.

In the new restaurant Feinschliff, an almost private dining area has been created at the Asia Hotel & Spa Leoben. The open kitchen is a real eye-catcher. Chef Raphael Schlager creates menus dedicated to Austrian culinary tradition, skillfully complementing them with modern nuances. As a hotel guest, you should definitely spend an evening here. A menu is available in four, five, or six courses – how often it changes and thus offers variety for outside guests remains to be seen. Our first visit thoroughly impressed us: from the greeting from the kitchen that sets the stage for an excellent evening, to the sweet finale including a gin shot, not a single wish is left unfulfilled. Regional products, served “on point” and rounded off with an excellent wine pairing.
