The story

Port361 in Leoben: Modern Purist Cuisine with a Gault&Millau Recognition

The Kitchen and Its Guiding Hands

At Port361 in Leoben, modern purist cuisine takes shape behind a glass partition that lets diners watch the work unfold. Owner and head chef Peter Brandner treats the kitchen as his personal workshop, refining raw ingredients until their natural character shines through. Sous chef Christian Prodner has stood beside him since 2018, managing the flow of vegetables and proteins with quiet precision. The transparent workflow and precise execution recently earned the table a 13.5 score from Gault&Millau.

A Five Course Journey of Clear Flavors

The tasting progression arrives as a five course surprise menu priced at €98, letting the seasonal harvest dictate each plate. A chilled kohlrabi variation opens the evening, followed by handmade pasta served as a gentle bridge. Guests usually finish with a precisely seared lamb crown accompanied by bright fruit reductions that balance the meat. Sommelier Florian Kislick matches these stages with wines that highlight acidity rather than compete with the food. This contemporary cooking style keeps every bite honest.

The Room and Daily Rhythm

Compact seating arrangements create an intimate setting where conversations drift easily between tables. The staff treats visitors like regulars returning to a familiar parlor, adjusting pacing and lighting to match the mood of the evening. Services run Wednesday through Saturday from late afternoon until midnight, giving the team time to prep delicate vegetable cuts and reduce pan sauces without rushing. That steady cadence supports a modern purist cuisine built on straightforward technique.

Peter and his team make you feel as though you are welcome to take a seat in their extended living room. Given the limited seating, a reservation is highly recommended! The open kitchen, which offers the chance to peek over the chefs' shoulders, makes the evening even more engaging for us. The five-course surprise menu truly delights. Clear, unadulterated, and authentic—this is the philosophy of Port361, reflected in the clarity and harmonious balance of freshness and depth found in every dish. The homemade pasta served as an intermezzo and the kohlrabi appetizer almost surpass the perfectly seared lamb crown accompanied by fruity, fresh elements. The wine pairing enhances the subtle flavors.
