The story

Zur Klause Ratten: A Quarter Century of Award-Winning Austrian Cuisine

The Kitchen and Its Philosophy

Zur Klause in Ratten builds its reputation on steady refinement rather than fleeting trends. Monika Fasching-Posch guides a kitchen that treats local produce with quiet respect, shaping each plate of Alpine cuisine around venison sourced from their own managed forests. This commitment to grounded ingredients earned the establishment a permanent place in the Gault&Millau guide, where they have maintained a twelve-and-a-half rating for over twenty-five years. The team approaches regional Styrian cooking as a daily practice of precision, letting seasonality dictate the menu rather than chasing novelty.

Plates That Define the Season

While the menu shifts with the landscape, the kitchen consistently elevates local harvests through careful technique. The disciplined approach of a modern Styrian kitchen allows hunters to supply tender cuts of roe deer and wild boar, which the cooks transform alongside forest mushrooms into rich Eierschwammerl-Ravioli. A lightly grilled Saibling arrives finished with a delicate white wine sauce, and boneless lamb racks rest pink beneath a crisp exterior. Guests often linger for the dessert course, where a structured Kardinalschnitte or sweet dough noodles provide a comforting finale.

The Dining Room and Setting

Visitors enter through a guest room furnished in an elegant country-house style that balances warmth with understated polish. Large windows frame views toward the surrounding hills, while the space remains approachable for cyclists resting along the nearby R8 path. The atmosphere echoes a local verse about finding comfort in familiar surroundings, making the hall suitable for both weekend hikers and diners seeking structure. The dining room reflects a broader commitment to honest Styrian cuisine, where presentation never outweighs flavor.

Slightly hidden behind the mountains, almost near the dwarves, lies the Gasthaus Zur Klause, which already scores points in the entrance area, but especially in the dining room with its elegant country house style. The classic-style cuisine also excels. The meat strudel soup is excellent, and the intensely flavored porcini mushroom ravioli make one consider an upgrade for the first time. Next comes a perfectly cooked char with a delicate wine sauce, venison loin in orange sauce, and lamb racks that are pink inside and crispy outside. For dessert, a picture-perfect Kardinalschnitte and apple bread or poppy seed noodles bring pure joy.
