The main course presents Wildfang Steinbutt accompanied by an intense veal sweetbread jus, Buddha’s hand citrus, and yuzu to cut through the richness. Whereas in recent years the breathtaking view from the restaurant of the tastefully modernized Hotel Schachner over the Nibelungengau region was sometimes more spectacular than what was served on the plate, that has now completely reversed: As part of the Emerald Menu, the kitchen team impressively showcases what is culinarily possible in Maria Taferl: Raw-marinated Gamba Carabiniera with a flavorful tomato, chorizo, and Carabinero ice cream serves as a first highlight, which is then surpassed by the subsequent wild-caught turbot accompanied by an intense veal sweetbread jus, along with Buddha's hand and yuzu.
