Plates From Mountain to Lake

The menu follows a “Vom Berg zu See” concept, pairing inland harvests with nearby waterside catches. Early courses present marinated calf fillet alongside fried calamari and ginger foam. Mid-service highlights include wild zander pan-seared with kohlrabi and pea cream, plus a pink lamb rack accompanied by melanzani tartare and crisp polenta. Apricot dumplings finish the progression, resting beside fruit roast and sorbet.
