Silva in Leogang presents a forest-inspired cuisine where chef Michael Helfrich channels his decade of experience into precise cooking. The Pinzgauer native previously refined his craft across Kitzbühel, Lech, and Noma in Copenhagen before returning to the Salzburger Land. His open kitchen treats smoking, fermenting, and careful preservation as standard tools rather than novelties. This hands-on approach ensures every service reflects both local terroir and global botanical influences.

The seasonal menu

Guests navigate two distinct pathways through the offerings: the meat and fish focused Wald menu alongside the vegetarian Wiese selection. Both frameworks follow the R50 sourcing principle while weaving in rare components gathered from forests worldwide. A starter of brioche-based Armer Ritter introduces Wagyu beef alongside wild herb oyster mushrooms, setting a precedent for balanced richness. Later courses pair zander with smoked eel, while the finale rests on chocolate mousse layered with sour cream sorbet and fir shoots.

The building sits within a former forestry operation where 36 hectares of mature trees now anchor the property. That historical connection directly shapes the dining room, which maintains an exclusive yet grounded atmosphere. Service flows under the direction of maître Johann Koller and patissier Birgit Tüchi, who coordinate every detail to match the kitchen pace. The new restaurant is inspired by the forest, as stated on its website, with the motto “Taste the Forest.” Yet here come red shrimp, caviar, and avocados? Well, Chef de Cuisine Michael Helfrich doesn’t take the forest theme quite so strictly in his open kitchen. It’s more about accents, inspiration, and storytelling. And it works brilliantly! The “Armer Ritter” made from brioche, Wagyu beef, and herb oyster mushrooms makes a fantastic start. The red shrimp with cucumber, caviar, and buttermilk pairs just as well as the wild-caught zander with smoked eel. A mature Château Pontet-Canet complements the roe deer with chanterelle consommé and lingonberries perfectly. Even for dessert—Original Beans chocolate served as both a foam and a mousse, accompanied by sour cream sorbet, strawberries, and spruce tips—Maître Johann Koller recommends a perfectly matched wine.
