This contemporary European cooking balances earthy vegetables alongside precise proteins, such as wild boar served with porcini mushrooms and sour cherry. During warmer months, the venue pivots to an izakaya concept where small Japanese-inspired plates encourage shared dining. Crispy chicken karaage with citrus mayo sits beside honey-glazed pork belly and grilled oyster mushrooms.

St. Pölten is not exactly known for fine dining. With the Aelium, that has suddenly changed. Everything simply works here: the interior, which could easily belong in a major metropolis, the attentive and competent service, the table culture (including remarkable greetings from the kitchen), and of course the food. Every course is outstanding: gelled borscht with caviar, lukewarm Fines de Claire oysters with mandarin foam, portobello with angel hair pasta (a dense umami crunch dream!), pink duck with Szechuan toffee and shiso leaf, and to finish, a generously stocked cheese cart featuring partially house-aged cheeses.
