Chef Janine Wieland’s “The New French” cuisine meets alpine tradition at Brasserie Leonis in the Löwen Hotel Montafon.

The story

Brasserie Leonis – Michelin-Recommended Austrian-French Dining in Schruns, Austria

Brasserie Leonis in Schruns

Inside the Löwen Hotel Montafon, Brasserie Leonis brings together French culinary artistry and alpine flavour. Chef Janine Wieland leads the kitchen with a concept she calls “The New French” — a modern take that relies on high-quality, regional and seasonal ingredients from Vorarlberg. The result is cooking that blends French finesse with Austrian tradition.

Sommelière Fabienne Hammer curates a thoughtful selection of Austrian and international wines to accompany each dish. The restaurant has earned a Michelin Recommended distinction, as well as two toques from Gault&Millau, placing it among the notable dining destinations in the Montafon valley.

The setting matches the food: natural materials, warm tones, and elegant details. Parisian bistro chairs and glass accents evoke a classic French brasserie, while contemporary touches keep the atmosphere relaxed. Different seating areas allow for both sociable evenings and intimate dinners.

Brasserie Leonis is open for hotel guests and external visitors alike. During summer 2026, dinner is served Wednesday through Friday from 18:00 to 22:00, and Saturday and Sunday from 12:00 to 22:00 (warm kitchen until 21:00). The restaurant is closed Monday and Tuesday. A few summer events in June, July, and August replace the à la carte service on those dates — guests are invited to experience a special trilogy of gourmet evenings instead.

For those looking to share the experience, gift vouchers for Brasserie Leonis are available — a chance to enjoy chef Wieland’s refined Austrian-French cuisine in Schruns.

The Leonis has evolved from a hidden gem into one of the finest dining destinations in the Montafon region. A pickled duck breast followed by a salmon trout ceviche make for an exceptionally successful menu overture. The roasted onion essence served with small Tyrolean dumplings is equally delightful. At this quality level, one could easily imagine the dumpling soup – as was once customary – as a main course. The veal sirloin, accompanied by airy potato cushions, egg yolk foam, leaf spinach, and a marrow bone, is casually presented tableside. That is how dining should be! A combination of wild celery and celeriac flavors paired with cherry sorbet elegantly crowns the outstanding menu. The wine service in the brasserie stocks many top vintages, with an above-average selection available by the glass.
