The menu begins with a glass of sparkling wine from South Tyrol, specifically from the Arunde winery, Europe's highest-altitude sparkling wine cellar. Not a bad start. Then things really get going. Greetings from the kitchen arrive in the form of aged salmon trout with soy and a duck egg yolk with lovage. Also a promising start. Next, a high-alpine product gets a Japanese twist: the alpine prawn is served alongside katsuobushi, the wonderfully fishy dried bonito flakes, and a yuzu bisque. Magnificent! The catfish with miso (still not the main course) is just as impressive, and the veal (now the main course, however) leaves a lasting impression.
