Tobias Bacher leads the alpine nature cuisine program at the Schwaigerlehen farmstead in Stuhlfelden, succeeding three generations of women who have run the property since 1892. He steers the kitchen from a massive wood-burning stove, preparing ingredients sourced within a twenty kilometer radius. Guests watch him work directly from their tables while the hearth keeps the air warm. He relies on forest herbs, homegrown vegetables, and berries picked behind the house rather than artificial flavorings.

The Gault&Millau guide awarded the kitchen a 12.5 score this year, praising the precise execution of its seasonal courses. Appetizers often start with pickled vegetables, cured bacon, and thick slices of sourdough bread baked by his father. Main courses feature locally hunted venison roasted with wild juniper or pan-fried trout from nearby Zeller See.
