Christian Wöber has found his home in the center of Tulln, and many of the regular guests present visibly delight in seeing the head chef and namesake of the restaurant again. Three petits fours already hint at what Wöber can do and where the evening is headed. The pheasant ragout paired with hazelnuts is a true delight. Rarely does this often rather dry bird land on the plate so brilliantly. The monkfish arrives slightly translucent, and the smoked pumpkin polenta pairs perfectly. How tender pork can taste is demonstrated by Wöber with his Ibérico secreto, a fan-shaped cut that still receives far too little attention. Excellent crust, rich jus, and – like all the dishes – a feast for the eyes. Calling the dessert “WOW” is naturally ambitious, but it fits: white chocolate, raspberries, and lychee ice cream make for a fascinating combination. The per-glass wine recommendations are top-notch. Alongside outstanding wine expertise, the cellar impresses with Wachau wines available across an impressive range of vintages.
