The kitchen and its philosophy

The Dengg family has guided this property for years, with Bastian Dengg leading the culinary program alongside hosts Ferdinand and Ann-Marie. Ingredients arrive daily from regional farms and trusted suppliers across the Zillertal valley. This foundation supports a menu that honors classic Tyrolean cuisine while incorporating structured modern plating. The seven-course tasting journey in the Zillertaler Stube reflects that balance.

Signature plates on the table

A chilled duck breast arrives sliced thin, filled with creamy foie gras and earthy morels. The turnip cream soup offers a dense texture before giving way to delicate mussel slices, though the broth carries substantial weight. Monkfish rests inside a crisp lardo layer, accompanied by a light lobster foam. Roasted lamb crown follows, cooked precisely to highlight the meat’s natural character.

Alpine setting and service

Guests dine at 1,500 meters above sea level, directly below the Hintertux glacier. Warm wood finishes and panoramic glass walls frame the mountain landscape throughout the dining room. The Gault&Millau guide awarded fifteen points in its latest edition, noting the staff’s attentive service complements the food. Regular visitors often return for the quiet pace and reliable standards.

Head chef Bastian Dengg and his team combine traditional Tyrolean cuisine with international influences – a combination that is also reflected in the seven-course tasting menu of the Zillertalstube. Particularly successful as a starter is the cold duck breast, stuffed with foie gras and morels. The turnip cream soup comes across as rich and creamy, but it overwhelms the delicate razor clam too much. The fish course – monkfish wrapped in lardo with lobster foam – is technically well-prepared, yet leaves little lasting impression. The same applies to the Tyrolean stone sheep: the lamb crown is cooked to perfection, but it too lacks that certain something. Overall, we would have liked to see more individuality and flavor in the dishes. The service, on the other hand, impresses as usual with competence and heartfelt attention – a comfort factor that still rounds off the evening nicely.
