What we experience at the chef's table in the restaurant designed in clean Korean chic is a journey to authentic Korean flavors that intriguingly open up toward modernity. Jaeho Jung and his wife Jungyun Kim have already made a name for themselves with the "Asiana Prjkt"; here they bring their experiences together – hence the name of the restaurant. The menu card – concealed in a scroll – reveals eight to nine courses. We start with seaweed salad, before artistically crafted chopsticks come into play for the "Makrele Muchim". Fantastic: the gochujang ceviche – trout, grapefruit zabaione, basil oil. Extremely umami-rich thanks to 18-year-aged miso paste: "Gyeran Jjim" (steamed egg custard) with mushrooms and garlic foam. A vegetable mandu arrives in a lacquer-like jus – simply delicious! And then there's "bread": Jung brings the pastry to the table unexpectedly, namely as sourdough bread ice cream served with olive oil, malt vinegar, and barley. "Scallop Guri", perch mandu, and Korean BBQ follow, before we let the drink known as a "happiness maker", misugaru, dance on our palate in the form of ice cream with milk foam and a honey cracker. Jaeho Jung's cuisine is defined by delicate refinement and an uncompromising focus on ingredients and flavor. The wine pairing is relaxed, expertly matched to the dishes, and also features rarities from Korea, such as Song I Ju (rice wine with matsutake) or Yangchon Chungju, another rice wine with notes of ripe cheese rind and soy sauce.
