The story

Brösl Vienna: Seasonal Austrian Tavern Cooking & Communal Dining

Seasonal plates and a shared table

Brösl in Vienna serves seasonal Austrian tavern cooking built around honest sourcing and daily flexibility. Lorenz Wallmann directs the kitchen operations while the team constructs menus strictly around what regional growers actually deliver. Every course arrives directly in the center of the table for collective serving. Diners combine plates freely instead of following rigid tasting sequences.

Signature flavors and local produce

Recent offerings feature house baked focaccia alongside barley risotto finished with sheep cheese. Foraged Schwammerl from the surrounding forests appear frequently, often paired with a gently poached egg or grilled seer trout. The kitchen also explores cross-cultural boundaries through a weekly Indian brunch that layers spice blends with familiar breakfast formats. These selections anchor the regional cuisine in tangible ingredients rather than abstract techniques.

A neighborhood tavern in the Stuwerviertel

Located near the Messe Prater station, the dining room leans into a relaxed Wirtshaus aesthetic with worn wood surfaces and unpretentious lighting. Reviewers at Gault&Millau noted how the space successfully merges comfortable pub vibes with serious attention to organic farming practices. The open layout naturally draws strangers into conversation as plates circulate around the table. Brösl remains a practical gathering point where everyday meals feel quietly elevated.

At Im Brösl in the Stuwerviertel, we don't just crumble; here, we bring together what belongs together: a cozy pub atmosphere, good food, honestly produced ingredients, a high proportion of organic products, and most importantly: a sharing concept that brings guests together at the table. The menu changes almost daily, and the current menu is posted on our Instagram Story. For example, in early June we enjoyed homemade focaccia, barley risotto with sheep's cheese, mushrooms from Vienna with poached egg and sea trout. Special: Indian Brunch.
