The story

Bruder Vienna: Modern European Cuisine with Fermentation Focus

The Kitchen and the Menu

At Bruder in Vienna, chef Lukas Krusche directs a modern European cuisine program where fermentation and precise plating take center stage. The six course menu titled Der Bruder bestimmt guides guests through small taste wonders rather than fixed traditional pairings. A dedicated olive progression called Voll im Öl replaces standard starters with a curated tasting journey. This approach recently earned notable attention from Gault&Millau, which praised the clever compositions and spirited cocktails.

Flavors and Techniques

Pike perch arrives alongside roasted sweet potato that carries a distinct pine needle aroma. Fermented components anchor many plates while keeping the overall composition light and approachable. European cooking at this venue avoids heavy sauces, letting each ingredient speak clearly on the plate. Guests frequently order the full tasting route to experience how these elements shift across the evening.

Space and Service

Maria Treiber welcomes guests at the door and sets a relaxed tone throughout the dining room. The venue maintains a distinctly youthful energy that keeps conversations easy and unhurried. The contemporary kitchen flows naturally into the unpretentious layout, encouraging quiet discussion. Tables sit close enough to hear the pass but spaced comfortably for private moments. Evening service runs from Wednesday through Saturday, keeping the pace steady and focused.

Casual with the hosts – and the food. Bruder isn't a classic tavern; it's more of a stage for flavors, ferments, and creative variations of the familiar. What bubbles in the kitchen lands on your plate in cleverly composed arrangements – and often in your glass (cocktails: definitely try them!). Quirky? No! Surprising, confidently stylish, and charming. A spot for anyone who combines curiosity with culinary pleasure—very hip, very different, and above all: very young—which you can already tell just by looking at the menu. Instead of a simple selection of olives, there’s an entire course called "Full of Oil". It’s best to dive into the six-course menu "The Brother Decides". That’s when little taste miracles happen, such as when the catfish with sweet potato carries a hint of pine.
