A structured seasonal menu

The current tasting lineup builds entirely around spring asparagus sourced from the Marchfeld region, reflecting a steady commitment to Austrian cooking. A smooth leek foam precedes individual spears paired with Heuriger potatoes and a rich hollandaise. Raw egg yolk and sorrel leaves cut through the buttery preparations. Critics from Gault&Millau recently awarded the kitchen twelve and a half points, observing that the four course progression guarantees a win rather than a loss.

The salon environment

Evening meals unfold inside the Roter Salon or the adjacent Grauer Salon, both housed within Vienna’s oldest standing building on the main boulevard. Heavy doors separate the dining space from the casino floor, creating a calm acoustic buffer. Plaster cornices and tall windows preserve the palace character without crowding the table arrangements. With a decisive advantage over gambling: you can only win. And so this time we opt for the "Menu Rouge" in four courses: The Marchfeld asparagus with egg yolk and sorrel is followed by a leek foam soup and solo asparagus with Heuriger potatoes and Hollandaise sauce.
