The experience features six courses dedicated to occasionally contrasting flavors, of which at least three must be selected. After a delicious chard preparation, a hearty bread course with South Tyrolean speck provides the necessary sustenance that would otherwise be difficult to achieve with the subsequent dishes. A dense parsnip soup with buttermilk foam and parsley oil, followed by a perfectly cooked piece of trout with a bold kick of XO salsa. A Duroc pork loin – just two slender slices –, and for dessert, a daring creative experiment featuring rhubarb, olives, and pumpkin seed oil.
