During the day, the Ährlich bakery operates on Wasagasse, while in the evenings the "Blue Lime Project" bakes up Ströck-style after-work bread. Served hot, it makes the seasonally rotating whipped butter (elderflower vinegar – sensational!) simply melt right in. It’s equally good for dipping into Stracciatella Austriaco served with lacto-fermented cherries, chili granola, and rhubarb. The course featuring cime di rapa (young broccoli) and pumpernickel crumbs is bread-inspired and excellent. The Korean-style fried chicken salad sounds fun, but is overly sweet. Standouts include the exceptionally tender veal bavette and the daily special: vegan çiğ köfte made from bulgur with cherry juice instead of pomegranate molasses.
