Daan de Val and Evelyn Schranz opened DEVAL in December 2018, building a partnership around creativity and hospitality. The kitchen operates on a strict reservation basis to minimize waste, using whole animals and seasonal produce from local suppliers like Thorhof Fish&Wild and Biohof Frühmann. Guests select meat or vegetarian options when booking, allowing the team to prepare exactly what is needed. Every course begins simultaneously across the six tables per room, turning the meal into a collective experience rather than a solitary event.
The menu highlights exclusively domestic products, often featuring forgotten varieties or bold reinventions of traditional flavors. Gault&Millau noted standout items such as wild hare presented in four textures, including a surprising hare ice cream, alongside a creamy wool pig blood sausage terrine that mimics the richness of foie gras. Other creations include a paprika consommé paired with pheasant fat dumplings and walnuts, or an XO beef dish served with sauerkraut, onion caramel, and crispy potato skins. All beverages on the list come from Austrian wineries, ensuring the wine selection matches the focus on local terroir.
Located on Doblhoffgasse directly behind the Wiener Parlament, the restaurant occupies a two-story space designed by Evelyn Schranz to encourage relaxation and conversation. Each floor holds six tables, maintaining an intimate scale that supports the chef's hands-on service style. A separate private dining room on the upper level accommodates groups of up to twelve people for exclusive events. The layout and understated decor reflect the goal of making guests feel immediately at home while enjoying sophisticated culinary artistry.
