For years, DiningRuhm has been a fixture of Asian-Peruvian fusion cuisine. The menu is extensive, and guests who prefer not to customize their own selection will be very well served by one of the set menus. The gourmet menu, in particular, offers a wonderful overview of Marcel Ruhm's diverse dishes. Starting with the mini-tacos with yellowtail and salmon, an oyster ceviche, nigiri with foie gras and salmon, or tuna with black truffle: each dish showcases masterful preparation and reflects the highest quality ingredients. The flavor combinations are truly overwhelming. The main courses featuring cod and lamb are also excellent, though perhaps slightly dominated by yuzu. The wine pairing isn't exceptional, but certainly adequate. Regular patrons might wish for a bit more variety over time.
