Guests enter through a discreet door on Kochgasse, guided inside by a doorman wearing white gloves and a cylinder hat before descending to a sleek black dining room. The open kitchen centers around a massive grill and roaring fire, allowing diners to watch the heat transform the catch and proteins. The intimate layout accommodates only fifteen guests across six tables, ensuring the entire party begins their tasting menu simultaneously. This synchronized format creates a shared rhythm, supported by the attentive service that balances Stefan's vision with Nora's welcoming presence.

The menu and the palate

The tasting menu costs 385 euros and unfolds as a structured progression beginning with crispy beef tendons, clear consommé, hamachi cured with kombu, and shrimp served alongside spalla cruda. The sequence builds toward a seafood-heavy segment featuring king crab, carabinero prawns, halibut, langostino, and cod, before landing on duck Albufera as the designated meat course. A pescetarian version is available with prior notice, while the kitchen maintains a strict stance against vegetarian modifications. Every dish in this fire-driven cuisine reflects a commitment to texture and smoke-infused depth.

In Vienna's eighth district, on Kochgasse (sic!), you are greeted at an unassuming door by a sharp, older doorman in white gloves and a black top hat. A staircase leads down to a stylish, black-themed dining room: an open kitchen, a large grill, a roaring fire, and an open oven. Cool atmosphere. Doubek is one of Austria's most exciting destinations for fish and BBQ aficionados. Here, you can experience BBQ fine dining of exceptionally rare quality. An "evening performance" – where all guests begin their 18-course menu simultaneously – is reserved in the evenings for a maximum of 15 guests across six tables. Almost Japanese high-end standards. Start: Gourmet appetizers such as crispy beef tendons and beef consommé, hamachi with kombu, shrimp with spalla cruda, and moules à la crème. Following this overture comes Doubek's BBQ opera featuring king crab, carabinero, turbot, langostino, cod, and – deliberately served as the meat main course! – Albufera duck.
