The story

Dstrikt Steakhouse Vienna: Premium Austrian Beef & Josper Grilling

The Josper Fire and Local Sourcing

Dstrikt Steakhouse in Vienna builds its reputation on precise steakhouse techniques and locally sourced Austrian beef. The kitchen operates exclusively with a Spanish Josper unit, maintaining temperatures near three hundred degrees Celsius to sear cuts while infusing them with hardwood smoke. Meat arrives directly from regional producers and undergoes a fifteen to thirty day dry aging process before reaching the plate. Grill masters tend the coals daily, ensuring consistent heat for everything from bone-in rib eyes to Japanese A5 Wagyu.

Signature Cuts and Critical Recognition

Critics at Gault&Millau recently noted how the dry aged porterhouse hits exactly right, praising the smoky depth that carries through to the carpaccio starter. Guests frequently return for the steakboard lineup, though the kitchen also prepares delicate plates like seabass ceviche paired with grilled pineapple. The tasting experience often concludes with a hazelnut soufflé featuring a molten center, a dessert that balances richness with precision. This steady attention to technique supports the venue’s standing among Vienna’s premier Austrian steakhouse destinations.

Curated Wines and Evening Ambiance

Sommelière Sindy Kretschmar guides visitors through a cellar holding over eight hundred labels, organized to complement heavy char and rich marbling. Monthly tastings highlight single producers, allowing guests to sample vertical selections alongside their chosen cut. The wine club occasionally offers custom wooden crates assembled from exclusive Austrian estates. Conversations flow easily beneath the restaurant’s polished interiors, where the focus remains squarely on the interplay between fire, meat, and glass.

The starter – beef carpaccio from the Josper grill – surprises with wonderful roasted aromas, a true standout in the carpaccio world. The sea bass ceviche is flawless in taste, but slightly dry. The main course featuring the porterhouse steak from Austrian dry-aged beef is grilled to perfection and a flavor hit. However, the side dishes are too cold and lack a bit of pep, and the chimichurri sauce is overly oily. The wine pairing is appealing and well chosen. The concluding hazelnut soufflé with a molten center is once again a real knockout. Overall, it was a successful visit, though there is still room for improvement here and there. The service is friendly, although coordination with the kitchen could be better. Address: Schubertring 7, 1010 Vienna, Austria.
