Duchardt brings classical French haute cuisine to Vienna’s Sonnenfelsgasse, where Marcus Duchardt continues the legacy of the former Restaurant Walter Bauer. Chef Annett Poussin leads the brigade while maintaining a strict commitment to traditional techniques. Modern shortcuts never appear here. The focus remains on precise execution and respect for established culinary frameworks passed down through decades of service.

Dishes built on seasonality

The menu highlights regional sourcing, stretching from local forests to open waters. A rotating monthly special currently features a large Breton turbot served with saffron broth and gold caviar. Regular guests will recognize the careful preparation behind dishes like lièvre à la royale. Every plate follows a straightforward structure that lets quality ingredients speak without unnecessary decoration.

The wine program centers on French, Austrian, and international labels, with a structured champagne pairing menu guiding each service. Marcus Duchardt has dedicated himself to classic French haute cuisine – and rightly so. The restaurant in Vienna's picturesque Sonnenfelsgasse was long known to gastronomy enthusiasts as "Restaurant Walter Bauer" – and the current team consistently lives up to its considerable legacy. During our visit, the rare "Lièvre à la royale" turned out simply excellent, accompanied by a glass of 1993 Château Valandraud. Modern gimmicks are absent here, and that is for the best.
