Head Chef Matteo Sciacovelli serves creative, finely balanced dishes with a clear profile. For example, the “Carta da Musica 21”: crispy flatbread with 21 herbs, Pecorino, lime salt, and honey – highly aromatic. The stuffed agnolotti also impress: well-rounded in flavor, intended as a main course, yet equally compelling as a starter.
