The story

Hansen Vienna: Mediterranean Dining in a Historic Stock Exchange Cellar

A Historic Cellar and a Family Legacy

Hansen in Vienna offers a grounded take on Mediterranean cooking inside the historic basement of the former stock exchange. Anita and Leo Doppler opened the doors on April sixteenth, nineteen ninety eight, choosing the light filled space for its terracotta walls and natural acoustics. Guests sit beneath the same arched ceiling designed by Danish architect Theophil von Hansen, whose surname now anchors the establishment. This architectural backdrop frames a relaxed environment where staff greet visitors directly rather than relying on numbered tables.

Refined Kitchen Standards

The kitchen follows a Mediterranean approach that balances coastal ingredients with regional Austrian produce. Daniel Fischer guides the culinary direction alongside maitre d Gerhard Pochop, earning consistent praise including a thirteen point five rating from Gault Millau for its steady quality. Visitors frequently return for the well executed gold bream fillet paired with parsnip cream and wild broccoli. Other reliable choices include the pan fried sardines served with tomato basil salsa or the rich beef tartare topped with potato straws and pecorino.

Seasonal Tastes and Curated Wines

Leo Doppler personally selects bottles that complement the lighter menu, focusing on both Austrian vineyards and trusted international producers. The summer lineup features crisp vegetable preparations alongside heartier options like the roasted veal striploin or herb crusted goat cheese salad. Dessert plates shift toward classic Central European traditions, offering apricot dumplings with butter crumbs or a dense dark chocolate mousse softened by stewed peach. Every course arrives at a measured pace, allowing guests to settle into the cellar’s quiet rhythm.

Located in the basement of the Vienna Stock Exchange, Hansen remains a reliable destination for refined cuisine in a stylish atmosphere. The visit begins with a Jerusalem artichoke foam soup that looks appealing and clearly delivers on flavor. For the main course, a gilt-head bream fillet is served, well-cooked and accompanied by a rich parsnip cream and wild broccoli, which elegantly complement the dish. The recommended Fish & Chips can certainly be recommended due to their ideal doneness and excellent batter. The ambiance in the sunlit vault is pleasant as usual, and the service is attentive and friendly. The wines by the glass are good, though the selection is somewhat limited. Overall, a solid offering.
